“Why do we need a pumpkin pie” is a weird question. It is not the sort of thing you buy because you need it.

Earl’s the kind of guy who fixes a wobbly chair by cutting off just a little of the longest leg. And then when it still wobbles, he does the same again, to whatever is now the longest leg.

We do something similar with leff-tovers: The extra roast beast goes into a stew with some carrots, onions and potatoes. Then the extra stew is served again, but with dumplings. Then we add the remaining stew to the spaghetti sauce. And the spaghetti gets re-done by baking it. And then… and three weeks later, we’re still eating stuff that probably has a little bit of the roast, and the carrots, and the potatoes, and some spaghetti noodles…

And then you can buy more pie if there is any whipped cream left over. And then more whipped cream…and so on…. Genius!

This is the story of my kitchen’s life. Several of my most basic recipes require three things that I wouldn’t buy at all if it weren’t for those recipes. And just as I buy the third thing, planning to finally get around to making the recipe, I discover thing one or thing two has gone bad and has to be thrown away. So now I’ve got thing three but I still can’t make the recipe without another strategic shopping trip.

The grandkids were here the other day when one spotted a half carton of whipped cream in the fridge. Well, I said , we better make something to go underneath it. Shortly an Apple crisp appears. Nice and easy for the kids to make.

Earl is my kind of guy. But he should have bought a pumpkin pie, a pecan pie, and 4 cartons of ice cream.

My husband’s always trying to use up something in the fridge saying “We might as well use this up”. Problem is, I have that item in the fridge for a purpose and will have to go back and buy more if he uses it up. However, if the grandkids could come over, all that whipped cream would be gone in a jiffy and they wouldn’t need the pumpking pie!

/we were given a very large pumpkin pie at Thanksgiving. Much to large for us to eat before going bad, so cut it up in slices. bagged two servings each and pulled them out as we wanted them. I found that frozen but slightly thawed was like eating pumpkin ice cream on a stick(crust). Oh, it was so creamy and oh, so good.
