    Pickling can improve the flavor of vegetables in certain ways, it’s true. But if you’re already at the table and it’s too late to pickle, you can always try doing what my dad used to say: “You can eat anything if you put enough pepper on it.” :-)

    Many vegtables have a strong, bitter flavor when over-cooked. American cooking styles tend to over-cook vegtables, or use canned foods, which tend to be over-cooked just to put them in the can. Frozen vegtables are not cooked as much, but the freezing process tends to make them mushy.

    Brocolli is much better raw, or lightly steamed or stir-fried. Brussel sprouts (and cabbage) are good brushed with olive oil, salt and pepper, then roasted.

    I have been known to teach cooking classes to adult leaders who had to deal with finicky younger tastebuds. I would ask “What is a yucky vegtable you don’t like?”, then tell them “Try this . . .”
