    My Mom put some strange things in my lunch when I was a kid, but at least she never made beet and cheese subs.

    A couple of years ago I had a yearning for beets, so I bought some and cooked them up.

    I found out that, apparently, over the years I’ve become susceptible to “Beeturia”. (Google it)

    It came as quite a shock when my “output” turned bright red for a day or two.

    I must have missed the anatomy lesson where mothers lose their taste buds. Beets are the one food I absolutely refuse to eat.

    Eew! Beets are nasty! My mom used to make them once a year for our Passover Seder. She mixed horseradish in it for the bitter herbs and the beets for the blood of Christ’s passion. None of us liked them, not even her. We eventually just got the beet horseradish, but the color fades eventually. So we just skip the beets now and use plain horseradish.
