I’m a little confused here. I see signs for “Potatoes” and for “Alternate Roots”, but I do not see any of the produce which I can clearly identify as tTRUE root vegetables (like carrots, radishes, turnips, beets, and sweet potatoes) to contrast with the alternate roots..

From the left I see: bananas (fruit) above what appears to be another fruit (possibly oranges), asparagus (stem vegetable), and potatoes (tubers which are underground stems).

Among the Alternative Roots there appear to be pumpkins (which are fruits) and some bulb vegetables (bulbs are mainly modified stems surrounded by fleshy modified leaves). These bulb vegetables are sometimes listed with or even called root vegetables. And I know pumpkins are used (cooked) as vegetables. But shouldn’t there be (it seems to me) some true root vegetables to contrast them with.

Well that’s true. Potatoes and other root vegetables by their nature can be stored for many months at low temperatures so thereby they can’t qualify for being called freshly picked produce.

They’ll need a new sign soon. non vegetable vegetables. Don’t what they’ll consist of but it’s already happened with plant-based meat.

Some of those others are surprising good, especially when roasted with a little olive oil and salt and pepper.

    ‘Alternative’ roots is more appropriate.

I once had to slap a carrot because it was too fresh.

The way I see it. If I want a salad I’ll make a salad. I don’t want a salad pretending to be a burger. I like both.
