    I remember eating carrots right out of the ground after rinsing the dirt out. Nothing in the store compares, organic or non. Did you know the apples you buy at the supermarket are, or average, 14 months old? There’s nothing like fruit from the tree, either.

    Someone brought in zucchini bread last week. One person refused to try it because he hates it that much. Not a big fan of the vegetable either but the taste of the bread is just awesome. He’s not allergic so hope one day he tries it and finds it to his liking.

    Zucchini is a nutrient dense food that has a lot of benefits. It improves digestion, helps protect against eye problems like macular degeneration (that I have; runs in my family) and cataracts (ditto) and has a lot of vitamin C. I eat it cooked with tomatoes and onions, and put Parmesan cheese on it…

    When I was a little kid and my parents were working to get their business on a good footing we had many times when we would have been hungry if it was not for our vegetable garden, fruit trees (though the apple did not last long, the cherry sure did), neighbor’s fruit trees when we kids traded fruits, wild wine berries and wild blackberries, a relatives’ chicken farm, and nearby fishing and clamming.

    Much later (my early 20s) when my mother was in her final year (without health insurance) and our family was nearly bankrupted by her medical needs for her smoking related malignancy, besides splitting work between her care and ways to earn money, we again had a larger than usual vegetable garden and friends used to gift extra fish they had caught. Having good food made a large difference for our own qualities of life and health.

    I wish we were in a place where we could have a veg garden. Many nutrient levels in produce go downward gradually after picking so using freshly picked produce makes an actual difference.

    We have a wide variety of squash types here in Ecuador. My wife was most familiar with sambo and zapallo and hadn’t much experience cooking “summer squashes” like zucchini until she met me. I taught her to do cuarzo, parador, and zucchini with garlic, red onion, green & red peppers, lightly sauteed in olive oil, and lightly seasoned with dill, salt & pepper.

    We have gotten together with a few neighbours to vary our crops. Everyone grows one or two and that way we all have a variety and no one is stuck with too much of any one crop. Except for the cannabis. We all grow a bit of that. Even the Chief Constable. Just don’t tell Ottawa.

    This is the same kid who was trying to be a peeping Tom at the summer camp, but ran like a thief and left Michael to be the fall guy. Worse yet, he wrote to his mother blaming the whole thing on Michael. So eating nothing but zucchini is what you get for lyin’, Brian!
