My mom would do jello with shaved carrot, pecans, and pineapple chunks. It was pretty good. I’ll have to “surprise” people at the next potluck with that.

I’d rather not have carrots in jello. They’re better as part of a salad. I prefer fruit in my jello. Mandarin oranges would be good in orange jello.

This actually happened to me. Okay it was green beans in the Jell-o, not carrots; but the finish product was pretty much the same; inedible.
