    I sub zucchini for cucumber in salads. I like cucumbers but they do not like me, so to speak. So send the little gardener to me—I’ll make good use of them all! :-)

    IF ONLY…….a patch of zucchini in the yard would keep the deer off of everything in our yard….but, they probably hate it, too.

    My mom had that problem until she discovered that blending up a large zucchini created lots of liquid which she then frozen and kept for making bread. She substituted zucchini water for regular water in yeast bread recipes (white or whole wheat) and you couldn’t tell the difference (either in kneading, baking or eating). Just blend the whole thing up – no need to strain it (well, cut off the two ends first).

    A friend is in the same boat. :) However, we’ve been the lucky recipient of many truly yummy loaves of zucchini bread. Banana, chocolate, walnut spice…..I started providing the flour, nuts and sugar because she was making so many. We freeze them.

    Zucchini Bread, or occasionally the little Fried Zucchini slices (Onion ring batter coating) can be very delicious. But I would not want a steady diet of either one.

    Love zucchini bread season! Bake, slice, wrap, freeze. The drained out juice is great base for sauce and soup.
