    Maybe the cook should have spent a few minutes with a shovel “tenderizing” the meat first.And, anyway, how many people do you know that boil pork? Slow grilling really brings the flavor out (I used to live in Texas. I know my ’que.)

    3 Steps: Then you should know pork barbeque is disparaged compared to beef and chicken – probably because/in spite of the numerous “Pig Stands” in the 1930s.

    Brockie: Those supposedly in the know compare it with veal.

    3 Step: OK, sausage is accepted and is pork, and babyback ribs, but loins and legs meat is more North Carolina through Tennessee. For the younger generation, pig stands were drive-in eateries featuring mainly (exclusively?) pork barbeque, although it is suspected that more rural examples had some armadillo (tastes similar, called Hoover hog) added to keep the 15-20 cent per sandwich costs down. They mostly disappeared during WW-II rationing.
