One of the places I eat grinds their own burger meat (or has a local butcher do it) so they can get EXACTLY the grind they want, EXACTLY the mix of lean and fat… and sometimes EXACTLY the mix of two or three meats (venison & pork is one). The surprising thing to me is that the burgers (which are Grrrreat!) aren’t much more expensive than a burger from a bar-n-grill.
I can’t recall the last time I had a burger at a fast-food chain franchise. I’ve had some at a place that specializes in them. Mostly, I cook them on my own grill. Sear on each side then move to the other side and smoke ’em. Mesquite and hickory work best with burgers.
I’ve actually tried some of the new “meatless” meats and they’re quite good.
My problem is my wife, the “Vegan”. She can’t stand ANYTHING that reminds her of “meat” so it’s “no-go” on anything that CAN’T be distinguished from real meat – go figure.
But as a “well-trained” husband, I’ve kept peace in my life \for the past several decades by the use of the mmagic words, “Yes, Dear”. And she eventually forgets, and then I get to fire up the grill for filet mignon.

Maybe if we had a little more competition among the big corporate food suppliers or a windfall profit tax, those prices would come down.

May I recommend a vegetarian diet? Half a century and it’s worked for me. The new plant-based pseudo meats are quite good.
