My wife worked in a professional kitchen for over 20 years and they never used hand sanitizer, only soap and water. Remember, these kitchens have to satisfy the city health inspector.
Soap and water is ALWAYS more effective that hand sanitizer. It takes at least two applications of a lot of hand sanitizer to kill viruses before the solvent evaporates.

When Hand Sanitizers first came out, they had problems with Young children drinking the stuff.
And, considering it’s around 140 – 150 Proof, that is Not Good.
