She’s getting away easy, using a food processor. Not sure about the end result, though. My mom never bought a food processor, as she could never find one that would properly grate the potatoes. As she got older, the task of grating fell to the next generation. Now it’s more work than I want to do, so it’s been several years since I made them from scratch.

Just start with a bag of hash browns – much easier. And… add just a small touch of sugar, grated cheddar cheese, and cumin.

Perhaps a family activity? Latkes are something a machine, or two, may be justified for the mass production. Even for a few days a year.

Usually it is the father/kids that peels the potatoes. Mom/G’mom does the cooking part. There’s their problem.
