    this gag was wriiten because i knew today i would be at the International Food Technologist conference. It is amazing how often I am seeing gluten free products here.

    My holistic doctor is not prescribing quite the diet for me that I originally asked about (Dean Ornish’s Reversal Diet) and this Dr. wants me to believe that I’m not tolerant of gluten.

    Actually, I COULD live gluten free but it does not seem logical to me (even with all the chatter on the net) and I love working with whole wheat flour mixed with lots of seeds and other grains for my recipes. almond crackers are great, but I’m not willing to bake them every 2 weeks (especially in AZ summer) and Ornish allows 1/2 C per day of unsweetened Greek yogurt (so in the present 3 months until my next blood work I WILL have wheat and some yogurt).

    My BP is improving (partly from no animal protein but partly from a change in attitude).

    Oh course its true. Apps don’t have gluten. They could have a virus. But it won’t transfer to you. Just your phone.

    As night-gaunt notes, there are 1% [probably a little bit higher] of the population with Celiac disease, who must absolutely avoid gluten in their diet. Unfortunately, it has taken wings as a fad diet. This means that food processors catering to the fad will claim that a product is gluten free, but it may be ’processes on a line that also processes …,wheat, …] and as a result the risk of cross contamination is unacceptable to most celiacs. The strip is unfortunate in that it is catering to the fad, not those with a real need for gluten free products.
