    Those were “hoecakes,” cooked on a hoe suspended over a fire, not “ho-cakes,” which implies that they would be made by a woman of questionable reputation and even more questionable, if sporting, morals.

    Yeah, but hoecakes were a kind of staple for field crews who cooked their biscuits on a hoe.

    Literally. The ethnicity of our field crews has changed, but often they are treated no better.
