    I’ve had a bison burger. It tasted good, but it was so lean that the burger fell apart while I was eating it.

    bison was a food source for the natives. it was also, a multitude of other sources for the natives. then, the white man used genocide against the natives. their justification was manifest destiny, bringing civilization to dark areas, the natural order of things where weak is meat, and the strong eat the meat.

    In “Bill, The Galactic Hero,” Harry Harrison posited a future in which the Bald Eagle was saved from extinction by making them commercially valuable: Eagle Burgers..Horse was also in the diet: Dobbin-burgers and Chloro-Fillies (green hot dogs).

    The Wood Bison is endangered; the American Plains Bison and Wisent (European Bison) are not.

    It’s a little-known fact that some companies specialize in shooting down buffalo as they fly overhead, and then selling the wings and the burger meat to various restaurants.
