One Thanksgiving at my folks’ Mom calculated how many mashed potatoes everybody was eat so that there’d be enough leftovers for my then fiance to make potato pancakes. “Cheryl [my sister] won’t eat much”. Cheryl (at dinner): “Oh, boy! Mashed potatoes!” We ended up with about half a cup. Personally, I blame my nephew – he was born the following June.
“latke” means “small patch” and comes from the word“late” meaning “patch” as in “to sew on a patch” I thought you ‘guys’ would like to know that. I guess the potato pan cakes must have got that name because in days gone by sewing was all in a day’s work … and those potato pancakes sputtering in oil do look like little patches…

My grandmother (rest in peace) used to make potato pancakes for us kids, many years ago. We ddin’t call tham latkes, but we loved them just the same!

The Scandinavians has their version of latkes too, only they use fish instead of potatoes. Sort of a lye-died fish. Like tie-died but with less color.
