    I made some wonderful venison pot roasts using Chianti! And an elk is, after all, a large deer!

    Elk cooks about the same as a good lean beef… if you do ground elk burgers, you would want to add a little beef suet, though, because it will fall apart if you don’t. I have cooked lots of elk, and even killed my own elk in 1984. Tasty.

    I’d go for that trade. 1 elk would feed their family for quite a while. It’s also healthier for you than grain fed beef. And bluetopazcrystal, Bambi was a cartoon, not real life. When you have deer getting in your garden eating your veggies (and yes, even in town we do), would you eat Bambi then? Balance in all things.

    It’s gamey compared to beef, but it cooks like any other lean meat. My folks would make enchiladas with it. I wouldn’t eat liver as a kid, but elk enchiladas – who’d know the difference? So much sauce.
