When William Shatner was once asked if Kirk and Spock were more than just friends, he answered that he would be unlikely (Kirk) to pick a mate (Spock) who only mated once every seven years: while Kirk was of course known to hook up on almost every episode.

It is also be written that Vulcan’s can mate any time they chose, as shown in “Enterprise”, but that they MUST mate during Pon Farr. Otherwise all Vulcan children would be born only once every seven years or so, which would make for an very difficult education system among other things.
