Poaching isn’t the best way to cook rhino. Start 24 hours ahead of time. A nice black rhino weighs about 2500 pounds, at 40%yield that gives about 800 pounds enough for say 800 people. Cut into 800 × 1 pound chunks, add salt/pepper/spices and wrap in foil. Dig pit around 6 foot deep. Cover bottom with charcoal and set alight. Lay the wrapped meat on top. Cover with another layer of burning coals. Cover with earth. Next day, come back, dig up and serve.
