Beef tongue should only be used for sandwiches. On pumpernickel bread, please, with horseradish and maybe a very thin slice of fried onion. Ate quite a few of those as a kid before tongue became a delicacy. Especially in Japan. Use to be one of the cheapest cuts at the meat market. As was heart.
