    I worked at Taco Bell for two years as a college student. Never did figure out the attraction of the “enchirito”. It’s not like burrito and enchilada were trademarked by someone else. Oh …

    I suppose that the logo on the backs of those two computers is supposed to be an apple with a bite taken out of it, but my brain first interpreted it as a swan, and now I can’t shake the image.

    My boss constantly insists that the most authentic Mexican restaurant in all of Tucson is Taco Bell. She says that as we speak, there’s an abuela somewhere in Mexico making a Mexican pizza, and that proves her point. Of course, she might only be joking.

    Just sayin’, as one who recalls a much emptier California: “Enchirito” (or, perhaps “Los Enchiritos” sounds to me like a town in interior San Diego County — one probably incorporated after developers bought up a bunch of derelict ranch land, and whose inhabitants are currently incensed over the cost of water and of electricity to air-condition their McMansions.

    But “enchirito” as a food? Not credible.
