    i thought he was doing game hens for most people? Those take NO time whatsoever, when you aren’t stupid about it. My air fryer cooks one up in less than 30 minutes with a wonderfully crispy skin. It’s the brining that the painful part

    I’m a big fan of roasting turkeys upside down. Turn them right side up for the last 30 minutes to brown and you have a perfect bird. Just make sure to rest for 20 minutes out of the oven.

    Having discovered sous vide turkey breasts, I will never roast a whole bird again.
