Those are good! Just substitute sardines for ham in a good Denver Omelette.
Oysters Benedict are also very good. Fried jumbo oysters and Hollandaise Sauce were made for each other.
And make sure you add plenty of spray cheese! Not that I like that or sardines. But a guy I used to work with would sometimes bring crackers, a tin of sardines, and spray cheese for lunch. I can still smell it in my nightmares.
