I’m not remotely Hispanic (although living in SoCal helps) and I love lengua. I’m always surprised when people turn their noses up at it. There was a Salvadorian restaurant we used to go to when I was younger that made an amazing lengua plate. If prepared right, it is more tender than even the finest filet mignon
