I thought it was Thomas Jefferson who liked (as well as invented or popularized) macaroni and cheese.

Best mac and cheese in the world: mix in a few bits of fried ham or bacon.I make my own, from scratch, of course. Key ingredient in the cheese sauce: a bit of powdered mustard.

You are repeating yourself.

I like to mix in ramen noodles and meat with mac’n’cheese. Hamburger with beef noodles, tuna with “oriental” or shrimp, chicken with chicken. No, I don’t make the mac’n’cheese from scratch. I buy the box. (Chef Boyardee’s is gross.)

Only the baked stuff for me, but I’m spoiled – I’m in the South, where it’s officially a vegetable in buffets.

I use my recipe for Welsh Rarebit with beer as the sauce for my Mac and cheese

Or how about like in 1980’s TV commercials – Kraft CHEESE and MACARONI?

Alas, macaroni and cheese is now verboten for me — too high in sodium and carbs! :(

Pretty sure its Schroeder here that likes mac&cheese and not Beethoven, and he’s just exploiting it so to get free mac&cheese from Lucy. I mean, if she’s going to be there bugging him all the time, he might as well try and make her useful, right?Of course, it’s Lucy. “Useful” is probably too much to ask.

I start with hot milk, into which I put mustard powder, just a touch of nutmeg (go easy!) and white pepper, and often a shake of Herbamare herbal salt. Then add cornflour (cornstarch) mixed with water to make a slurry, stir constantly over heat till the mixture thickens. Bang in your grated cheese (and yes, cheddar is best, or Manchego if you live where I do and can’t get cheddar). Mix in your bacon or ham bits.

This works for mac and cheese, or cauliflower cheese. For cauliflower I often add a few fried mushrooms to the cauliflower in the baking dish. Top with sauce and a bit more cheese.

Macaroni….a big glob of glucose! (As in sugar).
