When I make my gumbos, I don’t tell the Yankees about okra. They never know its in there and they love the food.Secret of eating, if it taste good – eat it. Compliment the chef but don’t ask the ingredients.Especially true when traveling in Southeast Asia and Africa !
Best gumbo I ever ate was at either Port Sulphur or Buras – cannot remember – at a place where the fishing boats backed up to the restaurant. The waitress brought out what appeared to be a bowl of mud, full of invertebrate “stuff.” It was magnificent, one of the two or three best meals I ever enjoyed. Think it cost around $3.50 in 1984.
@Colonel ClausBurgoo made it to Illinois (maybe following Lincoln up there?) A whole lot of small towns in central Illinois have annual burgoo picnics in the summer. Of course, I’ve heard that REAL burgoo requires possum or raccoon so I suppose I’ve only had the genteel version……..
But Alton Brown’s a Damnyankee, too. I’d even take that New Bedford, Mass. ex-drummer, now chef, Emril LeGasse’s recipes over Alton’s.‘Course we all miss the psuedo Cajun, Justin Smith’s "onyoons " !Truthfully, I don’t really care for okra, unless someone really knows how to cook it. Problem with file’ or a roux is that, if you don’t know what your doing, you can scrw it up real easily. Same with a good risotto !
I like gumbo but it has to have no and I repeat no Tabasco sauce and no no red pepper (ground)..I am not in Louisiana I am in Texas but someone made gumbo back in ‘93 and I liked it had a bit of red pepper and was spicy but I ate it cause I never had it before it was good mmm mmmm!!!!!..my gumbo will have seafood but if I make it for my mom it’ll be chicken and sausage cause she alllergic to shrimp and crab :’’(

Aww, Yankees have gumbo… Its called chowder…. Now us Kentuckians? We have gumbo too… we call it burgoo!

Love okra in soup and gumbo. Just wish someone would show me how to cook it right so I can do my own dishes.
