Assuming an omnipotent Creator, he could have created the world yesterday and none of us would have noticed that that was when everything started.

I agree with your view, we >could< have all been created yesterday and had all of our memories created as well. It’s just implausible in the name of the laws of physics that He created to go with it. God is awesome like that :D
