My mother is a Goan of Malayali extract and I was raised a rice-eater, and I still believe that Gohan is the finest short-grain rice the world has ever produced, whipping Arborio into a distant second. People just don’t know how to appreciate rice, Khalid. Only the Japanese have deified it and only Malayalis know how to maximise and respect it.
