Actually, its hard to make money with less than a hundred SEATED folks. :) 100 empty chairs would be rather short on promise.

I tend to agree. And, I am wondering why it wouldn’t be safer and easier to keep running the original restaurant and revamp it instead?

I think she is aiming at a more affluent clientele. Just like a bed and breakfast is different from a standard motel, her idea of a bistro is different from a standard high volume restaurant.

Oh, ye of little faith! Mary Lou can make a go of it; she is a very hard worker, and despite what you might think, has a good business head. Gene, too, is willing to put effort into making their lives what they want. I say GO TO PARIS and decide on the color of the curtains!
