    Baked is healthier and safer. So many fires from neophytes frying turkey for the very first time.

    Tried frying a Turkey but could only brown one side at a time as the skillet was too small! 8^()

    I smoked a turkey one t-day, years ago. It was a big turkey and it took a long time to do it right. Crowd was NOT happy about waiting for it, even though I started really early. However, once they had it, they declared it was the best turkey they ever had. Still my favorite.

    Fried is cool. Had that a few times. Neophytes gotta watch the fire and don’t put too much oil.

    I brine mine. Use one from Williams Sonoma, an apple-spice brine mix. It uses water and apple cider and makes for a really great gravy. Use some turkey stock as well as water for the gravy.

    It’s not the oil, it’s the water. If you do not carefully dry the turkey, inside and out, when you start to put it into the HOT oil, the water drops will boil and foam, causing the oil to bubble over the side of the pot onto the open flames under the pot resulting in a flare-up.
