    A GARDEN fork actually would work better than that trowel for digging up potatoes.

    Once you’ve got them dug up, Baldo, turn them into this…

    Potato Tart with Cheese TORTA DI PATATE AL FORMAGGIO

    3 potatoes, boiled and mashed
    1 cup flour
    4 tablespoons olive oil
    1/2 cup canned tomatoes, drained
    1/4 cup Mozzarella cheese, diced
    2 tablespoons grated Parmesan cheese
    2 teaspoons marjoram
    1 teaspoon basil

    To the mashed potatoes add flour, salt, and pepper and mix well.
    Oil the bottom of a large shallow baking dish and spread the potato mixture 1/2 inch thick on the bottom.
    Sprinkle well with 2 tablespoons olive oil.
    Add tomatoes, cheeses, marjoram, basil, salt and pepper,
    Sprinkle with remaining olive oil and bake in a hot oven, 400°F., for 30 minutes, or until cheese is brown.
    SERVES 4.

    Grandpa would just lay the chunks on the ground and cover them with straw. Much easier to harvest, although one year the straw contained some oat seeds, which sprouted up. We kidded him about sowing his wild oats.

    You need a full sized shovel. Dad actually uses a pitch fork.
