My dad would hunt them like crazy. They were not too bad to eat but but rabbits were easily FAR better. He would pickle [marinate] the squirrel meat; similar to “Hasenfeffer” for rabbits. That helped a LOT. Remember the British king and Bugs Bunny? "Whayah’s my Hawsenffefah!
I’m glad we do not have such troubles with squirrels here where I live. For example they belong into the Black Forest like the typical Kuckucksuhr (cuckoo clock). They are very cute and some are tame and eat out of one’s hand.Pic is from badenpage.de:

I never cared one way or the other about squirrels, but because of the way they behave in this ‘toon, I’m really starting to hate’em…

Plus they are showing them as red squirrels (Sciurus vulgaris) rather than the evil grey ones (Sciurus carolinensis).

I’ve never seen a squirrel take up residence in a bird house. Wasps do it all the time but I’ve never seen a squirrel.
