Pretty sure I’ve had a potato salad sandwich.
I recall places that put French fries inside pita pocket sandwiches, which establishes a precedent for putting potatoes between bread. Mind you, I don’t think I’d actually want a potato salad sandwich.
Just consider the bread a delivery system and you can put whatever your heart desires in there
