    Eggplant fix exactly like that is really good.

    (young eggplant you do not have to peal,

    and baking it is much less fat.)

    yeah - I’ve gotten my kids to like lasagna siciliana (with eggplant instead of meat). Took a while, though.

    @Clark Kent: Unless I missed something, the tomatoes in your Uncle Bill’s Sauce are RAW. Shouldn’t tomato sauce for pasta be cooked at some point? Raw tomatoes are good for salad (yes I HAVE had salad a couple times).

    Also when I cook onions or peppers in my microwave five minutes seems like more than enough. I’m afraid they would dissolve completely after ten minutes.

    (If I decide to add sausage I won’t tell you)

    Not a fan of Eggplant. I’d likely eat it as long as I don’t see its preparation

    I LOVE eggplant… and have even had my husband compliment me on it! I leave the skin on, slice it thin, salt it to draw out the moisture then pat dry with paper towels after about 30 minutes. While it’s sitting, I cook my pasta and sauce. I dip the eggplant slices in beaten egg, then breadcrumbs, and fry until golden. I put my cooked pasta in a baking dish, cover with sauce, arrange the eggplant, add more sauce and cover the whole mess with shredded mozzarella. Bake about 45 minutes until bubbly and the cheese is melted. What’s not to love?

    Linda, that’s exactly how I make it at home, and my husband and I LOVE it! My daughter on the other hand.. she’ll eat it but not willingly….
