    When I’ve bought cheaper cuts of meat I take the ‘low and slow’ approach when cooking. Works most of the time.

    Yeah, if you cook them correctly cheaper cuts (/meat that is naturally tougher) can still be tasty and easy to cut (or even mush if you like.)

    Also, not all cheaper cuts go tough even if you cook them fast – there are a variety of reasons for prices, some are just plain cultural, some are about taste, some health, and yes a few are about toughness. But toughness is more likely to be about the age and quality of the animal as a whole.

    My wife bought a Dutch Oven. We’ve noticed a significant improvement on the meats. Come out pretty tender.

    Cheap cut of beef, trimmed and browned then cooked in a pressure cooker with fresh veggies and herbs – yum!
