Sure. Rub some potatoes with oil, prick with a fork, and bake until done. Cut off the top, scoop out the potato, leaving enough shell to stand alone. Chop up everything else, and if you want cook for a few minutes in a microwave until tender. Mix with potato innards, pile it back into the potato shell. Top with cheese if desired, I prefer a drizzle of olive oil. Bake in a hot oven until a bit browned on the top. Works with any vegetables, especially good with chopped steamed broccoli or greens like kale. Even my kids loved broccoli this way.
