    Yumm – but just hot sauce and lemon for my oysters, please, forget the cocktail sauce and crackers. Or, serve them in little puff pastry shells with a nice wine sauce.

    Back in the early 70’s, my wife and I visited an oyster bar in New Orleans. The oysters were in a tray along the bar, and you could just pick and eat.Of course, with today’s neurosis over only God knows what illness, I doubt this type of facility would exist today.

    I love raw oysters on the half shell. I prefer to eat them with nothing on them. Various types of oysters have their own unique flavors. I live the in the PNW and one of the largest seafood purveyors is just a few miles from my front door. I still think fondly of eating Malpeque oysters at a seafood bar in the little town of Malpeque, Prince Edward Island.
