    Give them a typical order when the come in, do the interview, THEN ask them to repeat the order!

    Given the amount they need to remember, and the conditions they’ll need to deal with, it’s a pretty fair test.

    It’s NOT the “Carrying” that’s the usual problem, it’s keeping the orders straight, along with Who gets WHAT!

    “Do you have any previous experience?” would probably be a good one, Claire. And, of course, everyone’s favorite interview question: “Tell me about your shortcomings…”

    The BEST Waiters/Waitresses tend to be Actors/Actresses who have been disciplining their MEMORIES for YEARS. Memorization on short notice is essential to acting on TV or in Movies, these days (what with constant script changes/revisions, etc.)

    ANYBODY can do the Physical part. It’s not being “Rattle-able” and keeping a smile both on your face and in your voice, that makes the difference.
