My two cents on the reason he didn’t say “grandpa”: setting up a second miscommunication about bringing a wallet to dinner while wearing a monkey suit.
He doesn’t say, “This is Walt Wallet,” but ”Tell him that this is Walt Wallet.” Quite reasonable.
As to “monkey suit”, it’s in reference to the long tradition of putting monkeys into clothing, especially uniforms. It means any fancy outfit that you’d rather not be wearing.

Why would Walt refer to himself by first and last name to Boog? Wouldn’t Walt say “This is your Grandpa Walt.” or something like that?

I can’t understand why it’s called a monkey suit. I acquaint tuxes with looking more like penguins than monkeys.
