   I’ve had a bison burger. It tasted good, but it was so lean that the burger fell apart while I was eating it.

   They now raise bison for the meat supply chain. It’s too lean in my opinion, but they’re making money, so someone likes it.

   bison was a food source for the natives. it was also, a multitude of other sources for the natives. then, the white man used genocide against the natives. their justification was manifest destiny, bringing civilization to dark areas, the natural order of things where weak is meat, and the strong eat the meat.
