   Sicillian meatloaf: make up your regular mix and spead out on a sheet of foil. Spread some mozarella cheese, peperoni and crumbled hard boiled eggs. Roll up like a jellyroll and bake like normal, then serve with your favorite tomato sauce. For added flavor saute some diced onion and green pepper and add to mix.

   you should try it with ground chicken that’s what my wife makes it with we have not had ground beef in years it is actually really good

    I make it with not only ketchup on inside and out(topping). but I also use steak sauce and mustard as well in both spots. very light on the mustard. been known to use honey mustard at times.

    poor mans fillet-mgnon…
    season lean hamburger.
    shape into a patty.
    wrap a piece of bacon around and pin in place with a toothpick.
    brown in a skillet.
    finish in a hot oven.

    I consider meatloaf a nice main dish. Simple to make and bake if you’re in a hurry. I put an egg, Italian breadcrumbs, granulated garlic, dried minced onion, oregano, and season salt, then when it’s almost done, I brush BBQ sauce on top for the last few minutes. Hubby loves it!!
