I butchered a whole pork shoulder yesterday. I need to eliminate salt from my diet, making things from scratch is the best way. So, I ground half of it and saved the other half for pulled pork cookins. It took forever to separate all the membranes from the meat (well, most of it). I seasoned it, and have a kazillion breakfast sausage patties in the freezer.
