    Some people cannot tolerate gluten, but most people just have too much of it.

    - but consider this: with Jane’s fashion sense? Probably sugar and carbs are more her thing, with those cheese puffs thrown in for good measure.

    I think that most people are more concerned with the cost of living, taxes, quality of life and what ever happens in their own community.

    Gluten is one of those things that tell me when people don’t have enough to do. I mean really? for hundreds of years folks that couldn’t handle it just dealt with it or died- now, we have entire restaurants devoted to being gluten free.

    2 kinds of carbohydrates. Fast carbs don’t give the body a chance to assimilate them and tend to get stored as fat. Slow carbs are the best, less chance of being turned into unused fat.

    True. Add roughage to any carb and you can slow it down. That’s why rice and beans with the same carb count as a smaller serving of just rice, is digested more slowly and is less likely to trigger insulin generation and so be stored as fat.
