    From:” THE ALITALIA BOOK OF AUTHENTIC ITALIAN COOKING”

    by: Barbara Stacy

    Publisher: THOMAS Y. CROWELL COMPANY

    Spaghetti with Bacon Sauce

    8 Slices bacon, finely chopped
    1 pound spaghetti
    4 eggs
    1 cup grated Parmesan cheese
    Pepper

    Sauté bacon in a skillet until it is golden; do not let it become crisp.
    Cook the spaghetti according to directions on package, drain well, and return to saucepan.
    Combine the eggs with the grated cheese and beat the mixture.
    Add the eggs and cheese to the spaghetti; add the bacon and pour the hot bacon fat over the mixture, mixing well.
    The eggs should be lightly cooked by contact with the hot fat and hot spaghetti.
    If the eggs still look raw after mixing well, place the saucepan over low heat for a few minutes, stirring constantly.
    SERVES 4

    Note from me:
    The directions were proof-read. The pepper must be “to taste.”

    I wouldn’t approve of the item sticking out of her eye/forhead.
    Too easy for her to fall, bump into a wall/door and cause real damage.

    @Dampwaffle

    In the northeast most people who make marinara sauce will call it “gravy” or “sunday gravy”.

    @pointy_stick

    You call it “gravy” if you are of Italian descent, and especially if you live around the Boston, MA area.
