I eat jalapenos straight out of the jar. Hot sauce has to be really good Habanero to be hot enough for me. For example, Tennessee Mountain Green from Big S Farms
I am not a hot spice person. Often I think excessive heat hides the taste. Also, after getting Jalapeno juice in my eyes, face, nose, mouth, hands, and under my fingernails, I simply refrain.

I used to work with a guy who used jalapeno oil in everything he cooked, including the brownies. I found that out the hard way.

Ghost Chili (bhut Jalokia) is 1,030,000 and the new top dog T Trinidad Butch Scorpion is 1,400,000! I use the Ghost for my home made hot sauce.
