    You might also add a splash of vinegar to the soak water to break down some of the insoluble proteins that give them their unique musical nature.

    If you like your beans soft don’t add the salt until the beans are cooked. Adding baking soda near the end of cooking removes some of the aromatic qualities of beans too. Careful though the beans will bubble when you add the baking soda.
