    @David BanksThis is incredible, David! I’m gonna make it the minute I get to Goa. But is there any way I can make it with mussels or clams? Oysters aren’t that easy to find, but they can be found.

    Guess you can try…but it will be very fiddly! The beauty of this is that the oyster shells are large and heat up all round to help cook everything….and they are much meatier and stand up to the herb/pernod flavour well (which is quite strong). Try and find Oysters because they definitely work and taste great!
