    Strong White Flour? Is that similar to bread flour, i.e. with a higher gluten content?

    David, I tried these before with success – but high-protein flour’s rather hard to come by…any suggestions?

    Look for King Arthur bread flour. It’s pretty easy to find and has a very high protein content.
