Well, I’m with you on the liver, temploSUD (I despise liver with every fiber of my being!). However, I don’t have a problem with spinach (I have always loved it), but creamed squash? Eww!
Liver has lots of iron and is one of the best foods for you. The secret is not to overcook it….a few minutes on each side is fine. Creamed squash? Again, spinach has lots of iron which is excellent for the blood. One thing to note…all these items are quite cheap…and it indicates that John’s salary is not enough to keep up with the cost of living.

Same here but since I hated spinach as well as liver I asked her to always make the two together so only one meal was a wash up, not two. To this day I will not touch either one. It may be rich in iron but I’ll find other ways to get iron.

You can have liver very thinly sliced with carmelized onions but the veg has to be special and bright. Elly still holds to the 3 portion plate, if you have 1 spectacular veg it’s enough…maybe a small side salad.

@ sottwell. Liver and onions has been one of my favorite dishes since early childhood and I am a hale and hearty 71.. It was one of my mother’s favorites too and she lived to the ripe old age of 100.
I fondly remember the liver dish my father used to make.He would shave the beef liver and marinate it in red wine vinegar and garlic, The aroma of it frying in the pan made your taste buds water. He would serve it with the most buttery mashed potatoes and hot Italian bread. Unfortunately my children never took to the smell of it being cooked, so I rarely made it, which did not matter anyway because it was never as tasty as my father’s
Around 65 years ago I found a neat recipe for liver in the Tallahassee Democrat that I enjoyed for several years till the kids came along and I developed a gout-like condition. Wonder of wonders, I just found it online. Prob. too much trouble for people to make nowadays, but good with mashed potatoes, etc., in its day:
What amazes me is how similar steak is to liver… and the more expensive the steak, the more it resembles liver in both flavor and texture. I quite like liver, but I sure don’t like paying $25 a pound for it!
For once I’ll join the Elly-bashers — who feeds liver to a 3 year old? My mother tried it and I remembering giggling as I watched her pick it up off the floor where I flicked it off of my high-chair tray. It never crossed my lips. (In all fairness, the family doctor prescribed it).
Flour the Liver, and fry it. Make gravy from scratch and put the liver in the gravy. Cook rice and biscuits. My kids loved liver. They thought is was chicken. They didn’t need to know the truth. Now grown and have their own families, they cook liver that way. Their kids love it.
Well El, I am a liver lover, especially with onions and green peppers. I would eat your dinner because it is a protein balanced meal. Good work and give me two helpings of desert please.

All I know is that the Liver is a poison filter and can’t under stand why people would eat it.
My mom made me eat liver and lima beans before I could go trick or treat but when I threw up in the plate, she gave in.
