    It’s the semolina that place havoc with gluten challenged people.
    Duram is a little easier, tastier, too.

    I have celiac disease, durum wheat is no better than semolina. Buckwheat is supposed to be OK, since it doesn’t have the gliadin that wheat, rye, barley and others as well as process cross-contamination. Think flax and quinoa, or German grains for some reason, to avoid gluten problems.

    Sorry to hear about your problems with gluten.

    There must be various degrees of the problem. Or maybe, its a food allergy thing instead. I can’t tolerate semolina, but can eat a little duram wheat.
