For most of us Westerners, spikes in blood sugar puts on the fat (other genetic pools have different weaknesses – Latinos, for instance, have even less tolerance for Western refined carbs, and it is killing them). Refined carbs (white flour, sugar, etc) raise blood sugar quickly before you feel satiated, and insulin kicks in to prevent glucose poisoning. Insulin tells your fat cells to suck up the extra glucose. So refined carbs literally go (mostly) straight to your hips/belly.
